September 2024, Cape Town – Chef Vusi Ndlovu, a celebrated South African culinary talent, will be leading a captivating Heritage Day experience at Time Out Market Cape Town on 24 September from 12pm to 3pm. This event promises to be an immersive experience that celebrates the diverse flavours and techniques that define our heritage. The event will feature an interactive spice and seasoning masterclass, where guests will learn essential tips and tricks for enhancing their dishes, while enjoying a three-course meal.
Chef Ndlovu’s restaurant, Mlilo, situated in Time Out Market Cape Town, offers a culinary journey through the diverse heritage of South Africa. The menu celebrates the ways in which fire has been incorporated into cooking across the African continent from the traditional Zulu shisanyama to the Kenyan classic nyama choma, and everything in between.
Born in Zimbabwe and raised in Pretoria, Vusi initially faced pressure to pursue a traditional career in engineering. However, he defied expectations and chose to follow his passion for cooking. His culinary journey began at a hotel where he worked on the egg buffet, and he quickly became inspired by the chefs around him. After gaining invaluable experience from renowned Chef Higgs, his career pivoted when he ventured to Belgium to work at the renowned restaurant In de Wulf.
Upon returning to South Africa, Vusi continued to innovate and experiment with food, leading to numerous collaborations and pop-up events and ultimately finding Mlilo kitchen at Time Out Market Cape Town, where he continues to showcase African culinary heritage to a global audience.
To celebrate Heritage Day, Vusi will be taking the attendees on a journey to learn the art of brining, curing, and spicing and demonstrating the results of these techniques, while showing them how to enhance their dishes at home. Attendees will enjoy a three-course tasting menu, thoughtfully designed to incorporate each of these culinary methods, empowering them with the tools to elevate their own braai experiences at home.
